Learn the basics of choux pastry in this foundation skills class as we introduce you to contemporary and creative techniques that will truly impress. 

The aim of this class is to teach you how to make choux pastry and create modern and original eclairs. 

You will learn contemporary techniques that are current in the industry, which can be used in a fully professional environment or alternatively are fully utilisable at home. 

What you will learn: 

  • how to make a variety of modern glazes using colours
  • how to make cream Patisserie 
  • how to make a variety of modern fillings 
  • learn multiple piping techniques for decorations 
  • contemporary finishing techniques
  • how to make original éclairs such as: 
    • Galaxy Eclair
    • Chocolate Nutella eclair
    • Lemon Meringue eclair
    • White Chocolate, Raspberry eclair
    • Apple Rhubarb crumble eclair
    • Watermelon & Lychee eclair

All students are hands-on and work on their own eclairs.

You will leave this class with your very own eclairs in hand as well as a detailed step-by-step manual.
