Join us for this hands-on class and learn all there is to know about making perfect puff pastry. You will learn how to make puff pastry from scratch and achieve a perfect, flaky and light pastry dough. 

You will have the opportunity to convert your perfect puff pastry into a delicious, trendy figure cake that will impress your family and friends. 

What you will learn

  • how to make puff pastry from scratch, classic and inverted method
    • mixing of ingredients
    • adding butter and the correct way to create turns  
    • folding and layering - lamination technique
  • how to make crème pâtissière
  • how to make crème d’Amande / French almond cream
  • how to make crème diplomat
  • make a Figure Cake with a fashionable finish
  • using garnishes to finish the cake 

All students are hands-on and work on their own Figure cake. Students will have the opportunity to select the number they would like to use on the day.

A detailed recipe book is provided as part of the course.
